    Pork cut with a lot of fat infiltration and a lot of flavor. It has an elongated shape and is located between the spine and the loin. It is precooked at low temperature with wild thyme and then we finish it on the grill. It is accompanied with homemade chips and Pedro Ximénez sauce.

    Pork cut located on the back of the loin and with a very characteristic irregular triangular shape. Lean-looking cut with a flavor that is more reminiscent of beef in intensity. We serve it with emulsified mashed potatoes, sprouts and glazed organic carrots.
