The Rebel Pigs was born from the idea of giving the best possible meat products made BY meat lovers FOR meat lovers. And to avoid falling into what our grandmother said of "apprentice of everything, master of nothing", all our main courses are meat. We don't do fish or pasta. Why?. Because we are The Rebel Pigs and people come here to eat meat.

MAIN COURSES

    Iberian pork shoulder blade

    It is one of the most prized cuts of the Iberian pig. It is located on the shoulder and is famous for having a good amount of intramuscular fat. We grill it with wild thyme and accompany it with homemade french fries and Pedro Ximénez sauce.
  • Iberian pork loin feather

    Pork cut located on the back of the loin and with a very characteristic irregular triangular shape. Lean-looking cut with a flavor that is more reminiscent of beef in intensity. We serve it with emulsified mashed potatoes, sprouts and glazed organic carrots.
  • Iberian pork needle

    The needle area is located at the back of the neck and before the loin. The needle feather has a cylindrical shape and a large infiltration. The flavor is smooth and balanced, accompanied by a very tender and juicy texture. We accompany it with padrón pepper and caramelized onion.
  • Rib Steak

    A good size cut of beef rib steak cooked at a low temperature (57ºC) for 20 hours with wild rosemary. Finished on the volcanic stone grill and accompanied by truffled potato puree, citrus mayonnaise and its own juice.

    Navarrese duck breast grilled and carved. Accompanied by an emulsion of black garlic, red fruit coulis, truffle oil and flowers.
  • Entrecôte NO Bull$#*t

    Steak of old cow from Spain, typically from Galicia or the Basque Country. Sold by weight between 600/800gr. Butchered in “Japanese style” distinct for its significant marbling, tenderness, flavour and looks.

STEAKS

Our steaks vary constantly and we always try to give our customers a variety of breeds, dry aged times and origins. The offer of our steaks is always visible in our dry aged chamber and on the "blackboard" of the restaurant.

We take very seriously the treatment of our meats and the cooking processes that involve faithfully making such a noble product. For this reason, we advise that the preparation, cooking and carving of the pieces normally take a minimum of 30/40 minutes from the time you give us the go-ahead for the chosen piece. So please take it into account when ordering the rest of your meal.
